It depends upon the race and the expected conditions. Best thing is to run the router before the start, selecting one option at a time and see what your expected arrival time is. Then try a few options together that fit your budget in tokens or cash you are willing to spend.
If it's a really long race where the 16 day route is not going to be indicative of the full race then you have to use some knowledge of the expected conditions. For instance, in the JV, more than half the distance sailed will be in the roaring 40's, so heavy air sails and foils are a must. The speeds are high, so 5% advantage can be 2knts of boat speed. Not having light air sails to cross a few transitions will be a lot less consequential.
